Known for her refined yet relaxed style, Norka brings a wealth of international experience and local flair to the Palliser Kitchen, having earned accolades such as Luxury Lodge Chef of the Year while leading the kitchen at Wharekauhau Lodge.

With her roots in Chile and years spent living in New Zealand, Norka describes her cuisine as “Chiwi” – a vibrant fusion of South American influence and Kiwi sensibility. Her menus emphasise sustainable, seasonal ingredients sourced from local artisans and Palliser’s own kitchen garden, aligning perfectly with the winery’s elegant wine portfolio. She also practices zero-waste cooking, making her food as thoughtful as it is delicious.
